Celebrate July 4th with a Golden Delicious Apple Pie.
Prep Time 30 minutes
Cook Time 1 hour
Total Time 1 hour 30 minutes

Ingredients
  

  • DOUBLE 9-INCH PIE CRUST

Instructions
 

  • PIE CRUST
  • Combine flour, cold butter and cold shortening in large bowl.
  • Use mixer to blend to corn meal texture.
  • Add water by tablespoons just until dough begins to stick together.
  • Gather into a large ball.
  • Divide into two, flatten and wrap in plastic wrap to refrigerate 30 to 60 minutes.
  • Roll out between wax paper or generously floured board.
  • Line the bottom of 9-inch pie plate.
  • Roll out second ball of dough for the top crust.
  • ------------
  • APPLE PIE FILLING
  • Preheat oven to 425 F.
  • Slice apples into lemon juice, stir to coat. (Prevents apples from browning.)
  • Mix sugars, tapioca and spices in large bowl.
  • Drain apples.
  • Pour apples into sugar mixture, blend to coat apples with sugar mixture.
  • Pour filling in prepared pie plate.
  • Dot top with butter,
  • Cover with second pie crust.
  • Make small holes to allow steam escape while baking.
  • Bake 15 minutes at 425 F.
  • Reduce heat to 350 F, bake 35 to 45 minutes more.
  • Cover with aluminum foil if top browns too fast.

Ingredients
  

  • 5 cups cabbage shredded
  • 1/2 cup carrots shredded
  • 3/4 cup red bell peppers roasted and diced
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 3/4 cup red wine vinegar
  • 1 teaspoon celery seeds
  • 1/2 teaspoon Netta Belle's Choice Black Pepper
  • 1 teaspoon Netta Belle's Choice Flavour-Enhancer Spice Blend

Instructions
 

  • Shred cabbage and carrots in food processor.
  • Roast the red bell peppers, peel and freeze until ready to dice.
  • Combine all vegetables in a large bowl.
  • In a small bowl, whisk together oil, vinegar, seeds and spices.
  • Pour over vegetables, stir well to mix.
  • Put into serving bowl.
  • Refrigerate 3-4 hours to chill.

Braised Fennel and Carrots

 Fennel

Fennel has a flavor of anise, a mild licorice taste.  In many of the grocery stores it is sold as anise. Fennel can be eaten raw in salads with vegetables or fruits, cooked by braising, sauteing, stir-frying, steaming, or roasting.  It is an excellent source of Vitamin C, dietary fiber, potassium, manganese and folate.  The seeds are used in sausage, meat loaf, tomato sauces and bread. The seeds make a nice flavor to a fruit salad with the mild licorice taste.

Carrots

Carrots, a versatile vegetable, are good to snack raw or even in a cake for dessert. Carrots are in salads, side dishes, stews, soups and roasts.  They have a sweet taste, particularly when cooked in any variety of techniques as in Braised Fennel and Carrots.  Vitamin A is the highest nutrient in carrots, along with vitamin K, dietary fiber, vitamin C, potassium, manganese as well as smaller percentages of vitamin B6, B3, B1, B2 and E.

Ingredients
  

  • 1 fennel bulb cut into quarters lengthwise
  • 1 ½ cup carrots cut into 3 inch pieces
  • 3 cloves garlic minced
  • 1 cup chicken broth low fat
  • 1 tbsp olive oil extra virgin
  • 2 tbsp vinegar white wine
  • ¼ teaspoon sugar
  • 1 teaspoon thyme leaves dried whole
  • salt and pepper to your taste

Instructions
 

  • Trim fennel bulb, cut off stems, leaves and the bottom.
  • Wash thoroughly, cut into quarters. Cut out the core or heart of the bulb.
  • Wash and scrape carrots, cut into 3-inches pieces then quarters.
  • Mince garlic cloves.
  • Combine broth, oil, garlic, fennel, carrots into a large saucepan.
  • Bring vegetables to a boil.
  • Reduce heat to simmer until vegetables are tender, about 15-20 minutes.
  • Remove vegetables to a warm bowl, cover and keep warm.
  • Increase heat on liquid, reduce to 1/3 cup, about 5 minutes.
  • Mix the wine vinegar, sugar, thyme and seasonings
  • Heat through.
  • Pour the seasoned syrup over the warm vegetables before serving.

  • NETTA BELLE'S CHOICE CHOCOLATE CAKE

Instructions
 

  • NETTA BELLE'S CHOICE CHOCOLATE CAKE
  • Preheat oven 350 F.
  • Line 2 9-inch baking pans with parchment paper, grease and flour the pans.
  • Dissolve the cocoa in cup of hot water; stir to dissolve. Set aside.
  • In smaller bowl, combine flour, baking soda, baking powder and salt, whisk to blend. Set aside.
  • In mixing bowl, mix the butter, olive oil and sugar; cream until fluffy.
  • Add eggs one at a time blending after each addition.
  • Beat in the vanilla and dissolved cocoa to the creamed sugar.
  • Alternately adding the dry ingredients with coffee, 1/2 cup at a time, mix well after each addition..
  • Pour into prepared baking pans.
  • Bake for 25-30 minutes or until inserted tester comes out clean.
  • Cool 5 minutes before removing from pans.
  • Cool layers before adding filling and frosting.
  • FLUFFY FILLING AND FROSTING
  • Put sugar and water in heavy sauce pan, cook to 238 F or soft-ball stage.
  • Meanwhile beat egg whites and cream of tarter in large bowl until stiff and forms peaks.
  • When sugar syrup has reached temperature, dip the bottom of the pan in cold water for 1 second to stop the cooking.
  • Beat the stiff egg whites at high-speed while pouring in a stream of hot sugar syrup.
  • Add the vanilla, continue beating until frosting has cooled, about 5 minutes.
  • Spread frosting between layers, the sides and top of the cake.
  • Melt chocolate chips over hot water of in the microwave 1 1/2 minutes at 50% power.
  • Drizzle chocolate over the top of the frosting.

Ingredients
  • 4 cups ketchup
  • 4 cups ketchup
  • ½ cup maple syrup
  • ½ cup maple syrup
  • ½ cup lemon juice
  • ½ cup lemon juice
  • ½ cup dark brown sugar
  • ½ cup dark brown sugar
  • 6 tablespoons soy sauce, light sodium
  • 6 tablespoons soy sauce, light sodium
  • ½ teaspoon hot sauce
  • ½ teaspoon hot sauce
  • ½ cup Dijon Mustard
  • ½ cup Dijon Mustard
  • ½ teaspoon onion powder
  • ½ teaspoon onion powder
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons mesquite liquid smoke
Instructions
  1. Put all ingredients in a large kettle, with a wire whisk, blend together.
  2. Cover and heat the sauce on medium heat to boiling; simmer for 30 minutes.
  3. Whisk frequently to prevent sticking or burning. The sauce will become thicker and darker in color.
  4. Wipe the underside of the lid to prevent some of the moisture from dropping into the sauce. Remove from heat.
Notes
The sauce can be poured into 3 pint jars or quart jars to be saved. When jars have cooled, store in refrigerator.
