Valentine and Christmas Candy or any candy is now my favorite, however this was one recipe which  begs to be tried.  Skillet Chocolate Fudge is an old recipe found in a box of recipes stored and forgotten.  It is easy and quick; it does not use a candy thermometer to know when it is ready.  Using the electric skillet at 280 F  does it for you.

A quick and easy chocolate fudge recipe made in a skillet.

Serves: 2 pounds
Ingredients
  • 2 cups sugar
  • 3 tablespoons butter
  • ½ teaspoon salt
  • 1 cup evaporated milk
  • ½ cup miniature marshmallows
  • 1½ cups semi-sweet chocolate bits
  • ⅔ cup chopped pecans
  • 1 teaspoon vanilla extract
Instructions
  1. Prepare a 9 x 9 inch pan lined with aluminum foil and/or well buttered.
  2. Combine the first 4 ingredients into an electric skillet.
  3. Set the temperature at 280 F.
  4. Stirring to blend, bring the ingredients to a boil.
  5. Boil for 5 minutes while stirring constantly.
  6. Turn the skillet off.
  7. Add the marshmallows, chocolate chips and vanilla.
  8. Stir until the marshmallows and chocolate chips are melted and blended smoothly.
  9. Pour the candy into the prepared pan.
  10. Cool.
  11. If poured into pan lined with aluminum foil,, lift out and cut into squares.
Notes
Milk chocolate, dark chocolate or white chocolate chips can be used in place of the semi-sweet chocolate chips. ......................................................................

There are so many  fudge recipes available on the internet, cookbooks, newspapers and magazines.  I am certainly this has been viewed and used many times.  My original recipe was published in a small booklet put up by the Indiana Public Service in  1977.  What is so special about this,  I made it and it fudged!  I hope you try it and enjoy.

Platte County Pie

 

 Have you  been to Platte County, MO?  Try one of their favorites, Platte County Pie.

It is fun to go through my archives of recipe books that I have made  by writing recipes out of magazines.  I came across the recipe for Platte County Pie.  The recipe I use was out of  Bon Appetit, 1978, from the Frolics Restaurant in Kansas City, Missouri.

Everyone likes to indulge in chocolate and pecans, this is one soft pie that is like a big cookie, thick and sweet with a flaky pastry dough holding it together.  Who can refuse such a pie?

A rich and sweet pie of chocolate chips and pecans, one thick cookie. It becomes everyone's favorite indulgence.

Total Time 1 hour 10 minutes

Ingredients
  

  • 2 large eggs
  • 1/2 cup all purpose flour
  • 1 cup white sugar
  • 1 teaspoon vanilla
  • 1/2 cup melted butter
  • 1 cup chopped pecans
  • 1 cup semisweet chocolate chips
  • 1 9 inch unbaked pie shell

Instructions
 

  • Beat eggs in a medium mixing bowl.
  • Add flour and sugar, beat 2 minutes.
  • Add, vanilla, butter, pecans and chocolate chips.
  • Blend well.
  • Pour in pie shell.
  • Bake 60 minutes.
  • Serve warm or at room temperature.

Loaded Oatmeal Cookies for an after school snack.

These will soon become your favorite cookie.  You don’t have to be a child to like these Loaded Oatmeal  Cookies.  We had some relatives with us for a week.  Well, in midweek, I had to take time out to back another batch.  Just too easy to take one on the go.

How can you turn a cookie with molasses, whole wheat flour, wheat germ, old fashion  rolled oats and raisins as a bad cookie for you?  You forget there is shortening, pecans, chocolate chips and coconut flavoring.

Loaded Oatmeal Cookies are for an after school snack for your children, or coffee break at work with your co-workers. They provide extra nutritive value in using molasses, whole wheat flour, wheat gern, old fashioned rolled oats and raisins.

Ingredients
  

  • 1/2 cup shortening
  • 1/4 cup dark brown sugar firmly packed
  • 1 cup white sugar
  • 2 eggs
  • 1/3 cup molasses mild flavor
  • 1/2 teaspoon coconut flavoring
  • 1 1/2 cups all-purpose unbleached flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon wheat germ
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg freshly grated
  • 2 cups of whole rolled oats chopped in the blender to smaller pieces
  • 1 cup raisins
  • 1/2 cup chopped pecans
  • 1/4 cup chocolate chips

Instructions
 

  • Preheat oven to 350 F or 375 F depending upon your oven's heat.
  • Line cookie sheets with parchment paper.
  • In mixing bowl, cream together shortening and sugars.
  • Add eggs, molasses and coconut flavoring to sugar/shortening mixture and thoroughly blend.
  • In separate bowl, measure and sift together, flours, wheat germ, soda, salt, cinnamon and nutmeg.
  • Using a whisk, blend the dry ingredients.
  • Gradually add dry ingredients to mixing bowl of wet ingredients, beating after each addition.
  • Add the rolled oats, raisins, pecans and chocolate chips.
  • Beat at a low speed to thoroughly mix together.
  • Form inch balls of cookie dough put on cookie sheet 2 inches apart.
  • Flatten balls with a flat bottom glass dipped in sugar.
  • Bake 350 F 8-10 minutes.

A moist chocolate cake with a blend of chocolate and coffee. A good everyday cake for family or company without lots of decorating frills. Still tasty.

Ingredients
  

  • NETTA BELLE'S CHOICE CHOCOLATE CAKE

Instructions
 

  • NETTA BELLE'S CHOICE CHOCOLATE CAKE
  • Preheat oven 350 F.
  • Line 2 9-inch baking pans with parchment paper, grease and flour the pans.
  • Dissolve the cocoa in cup of hot water; stir to dissolve. Set aside.
  • In smaller bowl, combine flour, baking soda, baking powder and salt, whisk to blend. Set aside.
  • In mixing bowl, mix the butter, olive oil and sugar; cream until fluffy.
  • Add eggs one at a time blending after each addition.
  • Beat in the vanilla and dissolved cocoa to the creamed sugar.
  • Alternately adding the dry ingredients with coffee, 1/2 cup at a time, mix well after each addition..
  • Pour into prepared baking pans.
  • Bake for 25-30 minutes or until inserted tester comes out clean.
  • Cool 5 minutes before removing from pans.
  • Cool layers before adding filling and frosting.
  • FLUFFY FILLING AND FROSTING
  • Put sugar and water in heavy sauce pan, cook to 238 F or soft-ball stage.
  • Meanwhile beat egg whites and cream of tarter in large bowl until stiff and forms peaks.
  • When sugar syrup has reached temperature, dip the bottom of the pan in cold water for 1 second to stop the cooking.
  • Beat the stiff egg whites at high-speed while pouring in a stream of hot sugar syrup.
  • Add the vanilla, continue beating until frosting has cooled, about 5 minutes.
  • Spread frosting between layers, the sides and top of the cake.
  • Melt chocolate chips over hot water of in the microwave 1 1/2 minutes at 50% power.
  • Drizzle chocolate over the top of the frosting.
