Cabbage Apple Slaw Netta Belle’s Choice

 

One of the advantages of social media food communities, it gets me out of my box.  I look at all the food pictures and the recipes which give me ideas.  Some I don’t adventure into as they are beautiful, but  I am not ready to attempt.  Those are usually beautiful to look upon are desserts and too fattening, but would be oooh so good. Hurrah for the chefs and creators!

Cabbage Apple Slaw

I saute shredded cabbage and apples with caraway seed. Why not try apple salad ingredients with shredded cabbage.  I like to use Gala apples or Golden Delicious apples, use the apple of your choice. Cabbage Apple Slaw is a salad give many benefits to health.

Health Benefits

*Cabbage is high in beta-carotene, vitamin C, antioxidants for protection against disease.
Apples provide fiber to maintain digestive health.
Walnuts are high in vitamin E, copper and magnesium are heart-healthy nutrients.
Celery is recommended to lower cholesterol levels and high blood pressure.
Sunflower seeds contain plant sterols which can lower LDL cholesterol.
Raisins provide potassium, fiber and iron, also to promote better heart health.
Ginger aids in digestion, relieve motion sickness, and arthritis relief.

A heart-healthy crispy salad of cabbage, apples, celery and walnuts. A salad for all seasons.

Ingredients
  

  • 3 cups shredded white cabbage

Instructions
 

  • Put the shredded cabbage in a large bowl.
  • Dice the apples, stir in the lemon juice to prevent browning of the apples.
  • Add apples to the bowl of cabbage.
  • Add the celery, walnuts, sunflower seeds, raisins and ginger.
  • DRESSING
  • Heat the honey 10 seconds in microwave to liquefy honey to enhance blending.
  • Stir in the lemon juice, mayonnaise and celery seed.
  • Blend ingredients to smooth sauce,
  • Pour over the cabbage apple slaw and stir to mix.
  • Refrigerate at least 1 hour before serving.

Don’t you like it when you find a quick recipe and make little changes you have another delicious dessert?  This is how I think of the Netta Belle’s Choice® Upside-Down Cake. It is the same basic cake layer dressed up to which ever fruit is in season.  I started out with just making pineapple upside down cakes, then did not have pineapple.  Blueberries were in season and later peaches.  So 2 new cakes were added to my Netta Belle’s Choice® cookbookinabox® Recipe Box.

Netta Belle's Choice Upside-Down Cake

A quick and easy dessert of a moist butter cake dressed up with seasonal sweeten fruit on top.
Prep Time 30 minutes
Cook Time 50 minutes
Total Time 1 hour 20 minutes

Ingredients
  

  • 1/4 cup unsalted butter melted

Instructions
 

  • Preheat oven 350 F. Preheat a sheet of foil on the lower shelf to catch drippings.
  • Grease a 10-inch deep dish pie plate.
  • TOPPING:
  • Peel and slice the peaches into the lemon juice.
  • Mix the melted butter and brown sugar in a small bowl.
  • Spread this on the bottom of greased pie plate.
  • Arrange the toasted almonds on top of the butter and sugar
  • Drain the peaches, dry off any excess juices.
  • Arrange the peach slices over almonds and butter/ brown sugar mixture.
  • CAKE BATTER:
  • Whisk together all the dry ingredients: flour, baking powder, salt and spices.
  • In a larger bowl, beat together the butter and sugar until light and fluffy.
  • Add the eggs, one at a time, beating after each addition.
  • Beat in the almond extract.
  • Alternate adding the flour and milk, beating after each addition until well blended.
  • Spread the cake batter evenly over the peaches.
  • Bake in the middle of the oven for 45-55 minutes, or until tester comes out clean.
  • Cool the cake on a rake for 15 minutes.
  • Run a knife around the edge to loosen cake, invert cake onto a platter.
  • Serve warm or at room temperature.

Bluleberry Upside Down Cake _750 To get your creative juices flowing, here are a some pictures of other fruit ideas. Humm… I think I will make the cake, put it on a platter and slather it with whip cream and cover it with fresh strawberries and drizzle chocolate on top.  Go to go! Cranberry Balsamic Glazed Chicken

Enjoy a new, sweet and tart taste to sauteed chicken.  One of the ‘fads’  in food additions in the last couple of years has been the dried cranberries.  While they are good in cereals, trail mixes and breads, they are delicious in chicken and pork recipes. They do provide  20 mg potassium, 3 g fiber and 33 g of carbohydrate in 1/4 cup serving per Ocean Spray

Cranberries are not just for Thanksgiving, add dried cranberries to sauteed chicken breast to give it a sweet and tart flavor
Prep Time 20 minutes

Ingredients
  

  • 2 boneless chicken breasts

Instructions
 

  • Cut the chicken breasts across into equal sizes.
  • Roll the chicken pieces in flour seasoned with Sea Salt and Black Pepper.
  • Lay on rack to allow the flour absorb into the chicken.
  • Roll pieces into bread crumbs.
  • Heat the olive oil and butter in skillet.
  • Add the chicken to hot oil to sear and brown.
  • When done, remove to a platter to keep pieces warm while fixing glaze.
  • Pour out the grease and wipe the skillet with toweling.
  • Into the skillet, add the glaze ingredients and simmer for 2-3 minutes.
  • Return the chicken to the skillet to coat with glaze and heat through.
  • Serve the cranberry glaze with the chicken.

Marshmallow Pineapple Tropical Salad

Ingredients
  

  • 1 20 ounce can of pineapple tidbits

Instructions
 

  • Drain juice from pineapple into double boiler. Reserve pineapple tidbits.
  • Add honey, cornstarch and eggs to pineapple juice.
  • Whisk to blend, stir while cooking to thicken.
  • Stir in the butter and cool.
  • Pour the thickened dressing into a serving bowl.
  • Fold in pineapple, marshmallows, dates, pecans and oranges.
  • Chill a few hours before serving.

Several years ago, collard greens and many other vegetables were not available in grocery stores.  With the ‘world trade’, seasonal foods are available all year. Dandelion greens or spinach were only greens I was familiar with.  Maybe turnip or beet greens were available on our farm table, but what kid was going to eat them if they could get out of it.  My children were subjected to lettuces and spinach in salads.

So now I have learned to eat, cook and share Collard Greens, Corn and Tortilla Strata.

Nutritional Benefits

As you might have gathered, collard greens are good for you.  They are a dark green vegetable with the ability to lower cholesterol and  cancer protection. Collard greens are high in Vitamin K, Vitamin A, Vitamin C, calcium, fiber, and manganese to name a few.  There is your multiple vitamin! Now corn adds B vitamins, folate and thiamin when eaten as a special summertime food, corn-on-the-cob, a midwest favorite side dish.  Corn is considered a staple food, the basis for polenta, tortillas, burritos, corn meal, flour, starch and popcorn!¹

I adapted this recipe by adding roasted red bell peppers instead of mushrooms.  I like the sweeter taste plus the red color. Red bell peppers provide Vitamin C, A, B6 and folate.  Add garlic to the strata, it is credited to  having healing potential of lowering cholesterol and cancer protection.¹  Use 1% milk to lower fat and calories, though I did add cheddar cheese on top.

A layered casserole of vegetables and flour tortillas. A vegetarian side dish to be enjoyed with or without a meat entrée. It's an American lasagna!

Ingredients
  

  • 1 tablespoon olive oil

Instructions
 

  • Preheat oven to 375 F.
  • Grease a 2 1/2 quart or 9 x 13 casserole dish.
  • In a large sauce pan, heat the olive oil, add the minced garlic, cook until soft.
  • Add the blanched fresh or frozen collard greens, cook until tender, about 5 minutes.
  • Combine the milk, salt, pepper sauce into the flour, stir until smooth.
  • Add the milk mixture to the collard greens, stir until the sauce is creamy and thickened slightly, about 5 minutes.
  • Add the corn and roasted red bell peppers, heat about 3 minutes
  • Remove from heat, stir in 1/2 cup of shredded cheddar cheese until melted.
  • Arrange a layer of tortillas on the bottom of the casserole, cover with half of collard/corn mixture.
  • Add another layer of tortillas, cover with remainder of mixed vegetables.
  • Sprinkle top of casserole with remainder of the shredded cheese.
  • Bake for 25 minutes or casserole is hot and bubbling.
