Honey Crisp Applesauce, Plain and Cinnamon

We were in central Indiana last week, passed an orchard by New Castle, Indiana and could not resist the big sign of Honey Crisp Apples.  So we bought a few, they were so large and nice.  After a apple crumb pie, apple salad, applesauce, apples with cabbage, fried apples, snacking on apples, we needed more apples.  This time we got seconds, said to be used for cooking, well, they were as good as the prime apples for eating.

Applesauce, just right for snack time or on top of toast.

Applesauce is a favorite fruit to have on hand for desserts, eating on bread or to use in baking.  This time I decided to get out the crock pot.  That really makes it easy and a time saver to do other things while the apples are cooking.

I did plain applesauce: cooked  apples and put  the sauce  into clean jars to be kept in the refrigerator.  I did actually preserve some by using water bath canning..  I anticipated a much larger batch of applesauce.  A lot of water boiling, for cleaning jars and for water bath kettle for 3 pints of applesauce.  Oh well,  it was a good practice  as I do not do canning often.

Cooking apples in a crock pot is easy and a quick way to make applesauce, plain or cinnamon.
Prep Time 25 minutes
Cook Time 2 hours
Total Time 2 hours 25 minutes

Servings 4 pints

Ingredients
  

  • 15 large apples
  • 2 tablespoons lemon juice
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 teaspoon cinnamon.

Instructions
 

  • Put 2 tablespoon lemon juice into large bowl.
  • Peel, core and cut apples into 1 1/2 inch chunks or 8ths put into the large bowl.
  • Stir frequently to get the lemon juice on the apples to prevent browning.
  • Put into the crock pot.
  • Add the water, sugar and cinnamon.
  • Cook in the crock pot for 2 hours on high.
  • Mash with a potato masher to desired consistency.
  • Put into clean pint jars and cover with lids,
  • Store in refrigerator to use.
  • Or store cans on the shelf after water bath canning.

Notes

This is not my original recipe. The internet and cookbooks are similar; it varies by quantity of ingredients, much is to your tastes. For plain applesauce, omit the cinnamon. Run through the food processor or blender if a smoother applesauce is desired.

I can’t take credit for this great recipe.  This is an adaption of Hodgson Mill® recipe for terrific moist muffins. They are quick and easy to make and even quicker and easier to eat.  Muffins are a such a treat to have in the morning for breakfast. or a late evening snack.  They can be packed in school or work lunches

Flax Seed Benefits

Flax seed is an excellent source of omega-3 fatty acids.  A very good source for Vitamin 1, copper, manganese and fiber.  According to ” the world’s healthiest foods www.wh.org.*  there are several benefits of having flax seed in your diet.  The chronic diseases are helped through the benefits of antioxidants and anti-inflammatory in omega-3 oils, i.e. cardiovascular disease, cancer prevention, improving digestive health and post-menopausal symptoms.

An adaption of a Hodgson Mill recipe for a moist muffin for breakfast, snack or lunch.
Prep Time 20 minutes
Cook Time 20 minutes

Ingredients
  

  • 1/4 cup Hodgson Mill Milled Flax Seed
  • 3/4 cup whole wheat flour
  • 3/4 cup unbleached flour
  • 1/2 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg beaten
  • 1 1/2 cups finely chopped Gala apples
  • 3 tablespoons olive oil
  • 1/2 cup milk

Instructions
 

  • Preheat oven to 400 F.
  • Grease or line muffin tins with paper cups. Use the regular size tins.
  • Mix all the dry ingredients together, blend with a whisk.
  • In a large bowl, stir together the egg, oil and milk.
  • Add the dry ingredients and blend, do not beat.
  • Fold in the chopped apples. The batter is thick.
  • Fill the muffin cups 2/3 full.
  • Bake for 18-20 minutes or until a toothpick inserted will come out clean.

Notes

Fall is in the air and  the coloring of the leaves is happening…    The beauty of the fall season is something to behold when the sun is shining.   I have been given a couple of butternut squash to enjoy in older recipes and create a couple of new ones.  This is back to a recipe I put up  in October 2014.  Still good!

The  butternut squash beauty on the right was selected for the autumn tart.  The wonderful thing about this entree tart it is as tasty as  eating dessert.  In this  particular tart I used shredded chicken from chicken drumsticks previously cooked in the slow cooker.  Drumsticks were tried as a means of trying to be economical.  Chicken breasts are also very nice to use with this tart. Chicken was used this time as ham is not a part of this household’s diet anymore due to the high sodium and alas….extra fat.

Butternut Squash, Chicken & Pecan Tart

This make a wonderful tart with the ginger pastry.  It will fill a 11-12 inch tart pan giving it a thick filling.  This was a  perfect tart, it did not crumble when the tart pan rim was removed or crumble when it was cut.   Just add a green salad or vegetable with fruit for dessert and lunch is served.

2018 Version of the Tart:  I turned it into a 9-inch pie.  I cheated and bought a frozen pie crust.  I omitted the chicken, added just a little more squash, reduced the sugar some and proceeded as instructed.  Really had more filling than needed.  Baked the remainder in a small dish.

Cabbage Apple Slaw Netta Belle’s Choice

 

One of the advantages of social media food communities, it gets me out of my box.  I look at all the food pictures and the recipes which give me ideas.  Some I don’t adventure into as they are beautiful, but  I am not ready to attempt.  Those are usually beautiful to look upon are desserts and too fattening, but would be oooh so good. Hurrah for the chefs and creators!

Cabbage Apple Slaw

I saute shredded cabbage and apples with caraway seed. Why not try apple salad ingredients with shredded cabbage.  I like to use Gala apples or Golden Delicious apples, use the apple of your choice. Cabbage Apple Slaw is a salad give many benefits to health.

Health Benefits

*Cabbage is high in beta-carotene, vitamin C, antioxidants for protection against disease.
Apples provide fiber to maintain digestive health.
Walnuts are high in vitamin E, copper and magnesium are heart-healthy nutrients.
Celery is recommended to lower cholesterol levels and high blood pressure.
Sunflower seeds contain plant sterols which can lower LDL cholesterol.
Raisins provide potassium, fiber and iron, also to promote better heart health.
Ginger aids in digestion, relieve motion sickness, and arthritis relief.

A heart-healthy crispy salad of cabbage, apples, celery and walnuts. A salad for all seasons.
Prep Time 15 minutes
Cook Time 1 hour
Total Time 1 hour 15 minutes

Ingredients
  

  • 3 cups shredded white cabbage

Instructions
 

  • Put the shredded cabbage in a large bowl.
  • Dice the apples, stir in the lemon juice to prevent browning of the apples.
  • Add apples to the bowl of cabbage.
  • Add the celery, walnuts, sunflower seeds, raisins and ginger.
  • DRESSING
  • Heat the honey 10 seconds in microwave to liquefy honey to enhance blending.
  • Stir in the lemon juice, mayonnaise and celery seed.
  • Blend ingredients to smooth sauce,
  • Pour over the cabbage apple slaw and stir to mix.
  • Refrigerate at least 1 hour before serving.
