Stir-Fried Frozen Cauliflower

Fresh cauliflower looked so good at the summer’s Farmer’s Market.  I froze several bags to have this winter.  I got ready to cook it and wondered how to besides boiling in water and having a soggy limp vegetable.  I did use some in soup and casseroles.  I wanted the taste of roasted cauliflower.  By thawing it first, microwaving for 1 minute and draining well by putting on towelling paper to absorb more water, the cauliflower was ready for a quick stir-fry.  Seasoned and enhanced with walnut pieces made a quick side dish.

A cool salad in the summer and a winter treat with hot sandwiches in the winter to enjoy the fresh vegetables.

Ingredients
  

  • 8 ounces dry tri-vegetable fusilli pasta

Instructions
 

  • Cook the fusilli according to manufacturer's directions.
  • Rinse in cold water and refrigerate to cool before assembling salad.
  • Blanch asparagus in boiling water for 11/2-2 minutes until tender but firm.
  • Rinse in cold water; refrigerate to cool.
  • Dice and slice the onion, olives and tomato.
  • Put all ingredients into a large bowl.
  • Mix all ingredients of the Basil Red Wine Vinaigrette in a jar, shake to mix.
  • Heat the vinaigrette slightly to dissolve the sugar if needed.
  • Pour the Vinaigrette over the pasta and vegetables.
  • Refrigerate at least 2 hours before serving.
  • Spinkle parmesan cheese over the salad before serving.

Waiting for another snow storm to come into the midwest.  Winter is getting long!  Looking forward to have pasta salads with fresh vegetables from the local farmer’s market.  Although it will be awhile, this salad would be great with pulled pork sandwiches.

Sweet Wheat Bread, Netta Belle’s Choice

Sweet Wheat Bread is a good winter time comfort food.  Like bears, we want to hibernate too with our tummies full on cold snowy winter days.  At our house, we like fresh homemade bread.  So the past 2 weeks I have been baking breads:  panettone, French bread, peasant bread, whole wheat bread and now looking for the next new recipe.  Hot bread and butter is such a good snack with tea or coffee for a mid-morning or mid afternoon break.

I have a family hand-me down 8-inch cast iron skillet I like to use for the sweet whole wheat bread and for corn bread.  When I make corn bread I put 1/4 cup of olive oil in the skillet, then heat for a 2-3 minutes before pouring it into the batter.  The hot skillet and oil makes a crisper bottom on the corn bread, a good accent to soups.

Classic French Bread recipe was taken from Cooking Light Annual Recipes, 1999, p 35.  It was good, only problem it was a small loaf.  It would not last long with a family that likes hot buttered bread.

Julia Child’s  recipe for French Bread took longer however,  made two loaves.  I used my electric mixer with the dough hook to get the dough formed, then hand kneaded.  I used the recipe from Julia Child, The Way To Cook, p.38.  Here are some photos to show few of the steps to make French Bread.  It does rise 2 times to double in volume before being formed into a loaf.

The Peasant Bread did not get its picture taken before cut and eaten.  The recipe was adapted from Bernard Clayton, Jr., The Complete Book of Soups and Stews, 1984, p 402. I took some liberties to change it by using half all-purpose flour, half whole wheat flour and added 2 tablespoons wheat germ.  I proofed the yeast in water hotter than the 70 degrees and let is rise in a warmer than room temperature.  The bread was a large loaf with a dense texture. It toasted well and was good for toasted cheese sandwiches.

Ingredients
  

  • 1 1/2 cup whole wheat flour

Instructions
 

  • Use bread machine on the dough cycle or mix and let rise the first time.
  • Put all the ingredients in bread pan in the order given, except the egg white,water and turbinado sugar.
  • Set the bread machine to go through the dough cycle. This is the primary knead cycle and a rise cycle.
  • Prepare the pan for baking: oil 8-inch cast iron skillet or 5 x 9 x 3-inch loaf pan.
  • Remove the bread from the bread machine pan after the first rise.
  • Put on a lightly floured bread board to form into desired shape or pan.
  • Cover the bread dough with a towel, set in a warm and draft free location.
  • Let dough rise for 30 minutes or until doubled in size.
  • After the second rise, slash top of bread with sharp knife.
  • Brush the dough with the beaten egg white and water.
  • Sprinkle with turbinado sugar.
  • Bake 35 minutes or until brown; if it browns too fast, cover with foil.
  • Cool on rack before cutting.

Notes

A brunch idea: An Asparagus Tart

Each spring we look for daffodils, tulips, green grass and dandelions.   Then we look for the bunches of asparagus in the produce departments of the grocery.  Asparagus is now available all year round, but it is in the spring the stalks and tips are tenderest.  Also let’s face it, a better price per bunch.

Asparagus can be used many ways, it is good mixed in a melange of roasted vegetables seasons with olive oil,  rosemary, spice Blend, crushed red pepper, oregano flakes and sea salt.

Spring time asparagus surrounded with a custard filling, great for breakfast, brunch, lunch or late time supper. Excellant to be served warm or room temperature.
Prep Time 30 minutes
Cook Time 55 minutes
Total Time 1 hour 25 minutes

Ingredients
  

  • Caraway Pie Dough a 10 inch single crust

Instructions
 

  • Make the Caraway Pie Dough
  • Mix flour, salt and caraway seeds together in food processor.
  • Add butter and shortening.
  • Process until mixture resembles coarse cornmeal.
  • Add the ice water until the dough will stick together.
  • Roll into a ball, flatten into a disk.
  • Wrap in plastic wrap to refrigerate 30 minutes.
  • Roll dough out to fit a greased 10 inch pie plate or tart pan.
  • Prick dough lightly with a fork.
  • Preheat oven to 425 F.
  • Custard Filling
  • Wash and trim bottom ends off the asparagus.
  • Cut into 2 1/2 inch pieces.
  • Blanch for 3 minutes in boiling water, drain and rinse in cold water.
  • Save asparagus tips separately.
  • In a bowl, blend the cream, cream cheese and eggs, one at a time. It will be lumpy.
  • Blend in the salt, pepper and hot pepper sauce.
  • Spread the asparagus stalks evenly over the dough.
  • Pour in half of the custard filling.
  • Bake 15 minutes on the lowest shelf of the oven.
  • Remove from oven; pour in the remaining filling.
  • Arrange the asparagus tips around the edge of pie.
  • Sprinkle with Parmesan cheese over the top.
  • Reduce temperature of the oven to 375 F.
  • Return to the bottom shelf of the oven to bake 40 minutes.
  • Test for doneness: when a knife inserted in the middle comes out clean.
  • Rest the tart for 15 minutes before serving.

A soft spicey molasses cookie filled with walnuts and raisins. Originally called a tea cake. First published in an 1877 Portland, Maine cookbook.

Ingredients
  

  • 4 cups all-purpose flour

Instructions
 

  • Preheat oven to 350 F.
  • Grease or line cookie sheets with parchment paper.
  • Mix the first 6 dry ingredients together; whisk to blend.
  • Measure the molasses and water together.
  • In a large mixing bowl, combine shortening and sugars; cream until fluffy.
  • Reserve 1/2 egg; add the remainder of eggs to sugars, beat to blend.
  • Alternate adding the dry ingredients and liquids, beating after each addition.
  • Stir in walnuts and raisins until mixed evenly.
  • Drop by tablespoonful on the cookie sheet.
  • Brush tops with egg.
  • Add pinch of white sugar on top of each cookie.
  • Bake 12 to 15 minutes

Notes

These can be made into a bar cookie. Cut when warm and store to soften.

Grand Canyon Hermit Cookies

The Grand Canyon is a special spot our family likes to visit.  There is a fun train excursion from Williams, Arizona up to the Grand Canyon.  Certainly family oriented.  It is a must see place to visit each time we go to Arizona.  It is fun to walk around the El Tovar Lodge on the south rim, visit the shops and see the elk, ride the bus to lookout points over the Canyon and breathe the western air.  I like the the southwest. Now what does that have to do with cookies?  I remembered a cookbook I got at a used bookstore in Flagstaff,  The Grand Canyon Pioneers Society Cook Book, 1988 edition.  Gale Burak baked Gale’s Hermit Cookies to take to the Grand Canyon Ranger Stations.  I have renamed them Grand Canyon Hermit Cookies and bake them as a drop cookie.
