This recipe has many ingredients which makes about 3 pints.  I like to store in the refrigerator to have available for barbecuing or adding to foods such as in meatloaf.

Make the sauce is easy after measuring all the ingredients into a large kettle, it is just letting it cook until well blended and heated through.

A savory sauce to use for barbecuing on chicken, beef, pork or lamb. A sweet piquant sauce to use as a condiment on sandwiches, eggs or fried potatoes, kick up sloppy joes a notch.

Serves: 6 cups
Ingredients
  • 4 cups ketchup
  • ½ cup maple syrup
  • ½ cup lemon juice
  • ½ cup dark brown sugar
  • 6 tablespoons soy sauce, light sodium
  • ½ teaspoon hot sauce
  • ½ teaspoon onion powder
  • 2 tablespoon Worcestershire sauce
  • 2 tablespoon mesquite liquid smoke
Instructions
  1. Put all ingredients in a large kettle, with a wire whisk, blend together.
  2. Cover and heat the sauce on medium heat to boiling.
  3. Simmer for 30 minutes.
  4. Whisk frequently to prevent sticking or burning. The sauce will become thicker and darker in color.
  5. Wipe the underside of the lid to prevent some of the moisture from dropping into the sauce.
  6. Remove from heat.
Notes
The maple syrup and/or mesquite liquid smoke could be omitted for a milder flavored barbecue sauce is preferred. Putting the hot sauce in 3 pint jars will seal the lids. Allow to cool to room temperature and store in the refrigerator.  Have you  been to Platte County, MO?  Try one of their favorites, Platte County Pie.

It is fun to go through my archives of recipe books that I have made  by writing recipes out of magazines.  I came across the recipe for Platte County Pie.  The recipe I use was out of  Bon Appetit, 1978, from the Frolics Restaurant in Kansas City, Missouri.

Everyone likes to indulge in chocolate and pecans, this is one soft pie that is like a big cookie, thick and sweet with a flaky pastry dough holding it together.  Who can refuse such a pie?

A rich and sweet pie of chocolate chips and pecans, one thick cookie. It becomes everyone's favorite indulgence.

Ingredients
  • 2 large eggs
  • ½ cup all purpose flour
  • 1 cup white sugar
  • 1 teaspoon vanilla
  • ½ cup melted butter
  • 1 cup chopped pecans
  • 1 cup semisweet chocolate chips
  • 1 9 inch unbaked pie shell
Instructions
  1. Beat eggs in a medium mixing bowl.
  2. Add flour and sugar, beat 2 minutes.
  3. Add, vanilla, butter, pecans and chocolate chips.
  4. Blend well.
  5. Pour in pie shell.
  6. Bake 60 minutes.
  7. Serve warm or at room temperature.

Finally getting use out of my slow cooker.  Slow Cooker Pork Chops was quick to put together and enjoyed for our Sunday Dinner with steamed asparagus and an apple salad.  A simple menu for two.

I have had a slow cooker for several years.  I am just now getting into using it more and more. Occasionally I would use it for soup and not venturing into meals or meats.  This year I have changed that.  This fall, Crock Pot Applesauce  was  successful, then I tried Crock Pot Scalloped Potatoes and Ham for a family reunion.  For New Year’s, it was Slow Cooker Red Lentils-Sausage Stew looking for Good Luck in 2016,  the Italian way.  In this new recipe, there is a layer of sliced onions and quartered potatoes cooked with the Slow Cooker Pork Chops.

Since starting to church on Sunday mornings, I have found the slow cooker very handy, which I am sure many of you could have said,  “I told you so.”  It is great to come home and smell dinner, makes me feel as though someone else did the cooking.

Center cut loin pork chops and potatoes smothered in gravy

Ingredients
  • ½ cup sliced onions
  • 2 large potatoes, quartered
  • Seasonings, salt and pepper
  • 4 center loin cut pork chops, ½ inch thick
  • 4 ounce can of mushrooms, sliced
  • 1 package Country Gravy Mix
  • 1 cup water
Instructions
  1. Put the sliced onions on the bottom of the slow cooker.
  2. Arrange the quartered potatoes on top of onions.
  3. Season the pork chops with seasonings, salt and pepper.
  4. Put the pork chops on top of the potatoes.
  5. Mix the Country Gravy Mix with water; heat to thicken.
  6. Pour the gravy over the pork chops.
  7. Cover and cook on high for 5 hours.
Notes

Oatmeal Coconut Crispies

The Oatmeal Coconut Crispies are a refrigerator cookie.  The dough is softer;  it is formed into “logs” about 2 inches in diameter, wrapped  in wax paper and refrigerated for several hours or overnight.  When ready to bake,  the log dough is cut into 1/4 inch slices and baked. Refrigerator cookies have a rich flavor, lightly browned, uniform thin slices and a crisp, crunchy texture. This recipe is  from the original Betty Crocker’s Cooky Book, 1963

The Oatmeal Coconut Crispies are good cookies to freeze for later.  Baked cookies can be stored frozen for 9-12  months.  Having baked cookies  on hand in the freezer is handy to have available whenever there is a request to furnish cookies for a special event, tea, drop-in visitors or spoil your co-workers.  I have never kept a bag of cookies that long!

The Valentine Sweet Sugar Cookies  and the Shamrock Cookies were rolled cookies.  After mixing the dough, it was refrigerated for a few hours, then rolled at room temperature and cut out with cookie cutter, baked and iced.  Using a cookie cutter makes the same size and shape, depending how thick they are cut will vary the texture from soft to crisp.  They are baked until lightly browned and have a rich delicate flavor.

A refrigerator crispy cookie with favorite flavors of oatmeal and coconut, a good cookie to serve and freeze for later.

Ingredients
  • ½ cup unsalted butter
  • ½ cup shortening
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla
  • 2½ cups all-purpose flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 1 cup flaked coconut
Instructions
  1. Into large mixing bowl, cream butter, shortening and sugars.
  2. Add the eggs and vanilla, cream until fluffy.
  3. Into smaller bowl, measure the flour by dipping method.
  4. Add the soda and salt, whisk to blend.
  5. Stir into the shortening mixture.
  6. Blend in the oats and coconut. The dough will be soft.
  7. Divide the dough in half.
  8. Form the dough into logs with a 2 inch diameter.
  9. Wrap in wax paper, refrigerate overnight.
  10. Heat over to 400 F.
  11. Line baking sheets with parchment paper or light grease pans.
  12. Cut the log into ¼ inch slices.
  13. Bake 10 to 12 minutes until lightly browned.
  14. The cookies do spread, allow 2 inches between cookies.

White Bean-Spinach  Vegetable Soup  is a good  to have on hand in the freezer or a full pint jar setting in the refrigerator with soup ready to heat for a lunch.

I like to have soup available for quick lunches, so when I make soup, I make 8 cups from the recipe.  It is usually very thick with vegetables or the main ingredients. Because it is extra thick, I will add extra 99% fat free natural chicken broth when I reheat 2 cups of White Bean-Spinach Vegetable Soup.

Preserving the extra soup

The pictures of the white beans illustrate my home cook and canning. After the kettle of soup has cooked, I put the White Bean-Spinach Vegetable Soup into clean pint jars, seal, let cool to room temperature and set the jars in my refrigerator.  It helps to have an extra refrigerator on hand. These jars of soups are usually used in 2 weeks or less. If frozen in freezer bags or plastic freezer containers,  the soups could be kept longer.

Benefits of eating White Bean-Spinach Vegetable Soup

The choice of vegetables can vary with your likes or preferences.  This is an excellent way to meet the dietary requirements of 5-13 servings of vegetables and fruits each day.  Although fruit does not go in the soup, you have snacks and dessert with your meal.  The beans provide fiber and protein, carrots provide vitamin A, peppers contain vitamin C, potatoes are high in potassium and spinach if rich in folate.

Ingredients
  • 1 tablespoon olive oil
  • ¼ cup yellow onion, small chop
  • 3 garlic cloves, minced
  • ¼ cup red bell pepper, small chop
  • ¼ cup celery, ½ inch slices
  • ¼ cup carrot, ½ inch slices
  • 1-2 cups cooked white potato, chopped ½ inch
  • 2 cups cooked white navy beans, drained or 16 ounce can of white beans, drained
  • 14 ounce can of diced tomatoes with juice
  • 1 teaspoon fresh ginger, minced or grated
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 cups of chicken broth
  • ⅔ cups of water or more for thinner soup
  • 1½ cup frozen spinach
  • salt and pepper to taste
Instructions
  1. Prepare the white/navy beans or use canned beans.
  2. Cook the white potato, chop
  3. Chop the vegetables, onion garlic, pepper celery, carrot, ginger.
  4. Heat oil in large Dutch Oven or kettle.
  5. Add onion, garlic, celery, and carrots.
  6. Cook until onion in tender.
  7. Pour in the beans.
  8. Add tomatoes and juice.
  9. Add potatoes.
  10. Add ginger and seasonings.
  11. Pour in broth and water.
  12. Add the frozen spinach.
  13. Bring to a boil; reduce heat and simmer.
  14. Cook until thoroughly heated.

Rice:  A dish of many flavors.

Rice is a stable grain used all over the world.  This is one grain used in soups, salads, entrees, desserts in multiple cuisines. There are 8,000 varieties.  The more common varieties we see in our stores are Arborio, a round grain used in the Italian dish, risotto.  Basmatic rice is an aromatic nutlike fragrance and light texture.  Sweet Rice is very sticky to make sushi and Jasmine is a soft textured rice.  More common in U.S. groceries are the long grain, medium grain, brown rice and wild rice.

Brown rice has the most benefits. It has abundant amounts of fiber, complex carbohydrates, essential B vitamins, manganese and selenium . There are several layers to a grain of rice, the hull, the outermost layer and  inedible is removed to get brown rice.  White rice is milled and and polished which removes the bran and germ removing important layers of nutrients. Polished white rice must be “enriched” with vitamins B1, B3 and iron which are destroyed in the processing.

< Cholesterol is lowered by the oil in whole brown rice.
<  Nutrients in whole grain protect again heart disease.

After the big discussion on brown rice, I have to admit I frequently use long grain rice.  Last week in my blog, I talked about the Creamy Rice Pudding that I had made to go with the Chicken Schnitzel and Roasted Mixed Vegetables.  I used white long grain rice.

A delicious creamy pudding of rice, raisins, cinnamon and almonds breakfast or dessert for lunch or dinner.

Ingredients
  • ¾ cup uncooked long grain white rice
  • 1½ cups water
  • 1 cup vanilla soy milk
  • ½ cup evaporated milk diluted with ½ cup water
  • ⅓ cup white sugar
  • ¼ teaspoon salt
  • 1 egg, beaten
  • ⅔ cups raisins
  • 1 tablespoon butter
  • ½ teaspoon vanilla
  • cinnamon
  • nutmeg
  • toasted sliced almonds
Instructions
  1. Boil 1½ cups water to boiling in a medium sauce pan.
  2. Add the uncooked rice.
  3. Reduce heat and simmer for about 20 minutes, do not let rice get to dry and stick.
  4. In another medium sauce pan, combine the cooked rice, 1½ cups milk, sugar and salt.
  5. Cook over medium heat until thick and creamy, about 15 - 20 minutes.
  6. Add the remaining ½ cup milk, beaten egg and raisins.
  7. Cook 2 minutes more, stirring constantly.
  8. Remove from heat and stir in butter and vanilla.
  9. Top with cinnamon, nutmeg and toasted almonds.

Chicken Schnitzel:  A fresh change from comfort foods.

We have been having  soups, creamy casseroles, breads and desserts to comfort us in the cold of winter.  I decided we needed something crispy and fried.  Fried food is a rarity at our house, we bake, broil, steam, lightly saute or braise.   I remembered Chicken Schnitzel.

 It tasted so good, crispy, tender pieces of breasts of chicken with a crispy coating.  It was a nice change.

We look for comfort in foods, in the cold weather we look for comfortable clothes by wearing layers of  tee shirts, sweatshirts, big sweaters, and warm pants.    

 

Related imageThen comes spring and the unveiling!  Will that be a shock to you?  Have you found all your comfort foods around your middle? Are your scales a forbidden place to step?  Does it sound like a  lead into for a low calorie meal?  It wasn’t that at all. Really just changed the flavor of comfort foods to foods cooked in olive oil.

I cut the chicken breasts into thin layers, 1/4 to 1/2 inch thick.  I did not flatten the pieces, as in true schnitzel. I mixed an egg with 1 tablespoon water and prepared a pan of flour, cayenne pepper and   a seasoning blend and black pepper.  I dipped the chicken cutlets in the flour, then into the egg mixture and again into the seasoned flour.  When the oil was hot in the skillet, I added the chicken cutlets to brown under a reduced heat, until crispy on both sides, about 4-6 minutes each sides to 170 F.  This recipe was inspired by Winemonger.com.

The side dish was roasted mixed vegetables, coated with olive oil, dried Italian Seasonings and black pepper.  The vegetables are those on hand, this time we had potato, zucchini, onion, garlic, carrots, celery, cabbage and cauliflower.  These were roasted at 525 F to tender and somewhat browned, 20-25 minutes.  They were a nice balance with the Chicken Schnitzel.

We still had some sweet, warm, creamy, comfort food:  Creamy Rice Pudding.  This is a favorite recipe adapted from Chef Ron Lock’s Creamy Rice Pudding. I used long grain white rice, 1 cup vanilla soy milk, 1/2 cup Carnation Milk and 1/2 cup water.

Fried crispy chicken cutlets with a thick crust over the tender white chicken breasts.

Serves: 4 pieces
Ingredients
  • 2 boneless chicken breasts
  • 1 egg beaten
  • 1 tablespoon water
  • ⅛ teaspoon cayenne pepper to taste
  • 1 teaspoon Flavour-Enhancer Spice Blend
  • ½ cup Flour
  • ¼ teaspoon Ground black pepper
  • 4-5 tablespoons olive oil or less if desired
Instructions
  1. Cut chicken breasts in half, lengthwise or about ¼ to ½ inch to get about 4 cutlets
  2. Mix the egg and water.
  3. Lightly season the chicken cutlets with cayenne and Flavour-Enhancer Spice Blend.
  4. Mix the measured amount of seasonings in the flour.
  5. Roll the chicken cutlets in the seasoned flour.
  6. Dip in the egg to coat on both sides.
  7. Again dip in the seasoned flour, set aside while seasoning the rest of chicken.
  8. Heat the olive oil, hot, in a heavy skillet, the oil will sizzle when chicken is added.
  9. Place the chicken cutlets in the skillet to brown about 4 minutes.
  10. Sprinkle more black pepper is desired.
  11. Turn the pieces over to brown the other side for about 4-6 minutes.
  12. The temperature of the chicken should be 170 F when done.
  13. Lay the crispy chicken cutlets on a meat platter lined with toweling to drain excess oil.

 Smoothies are a good and quick way to get the daily balance of fruits and/or vegetables in one glass full.  It is more a time saver than juicing and uses less fruits or vegetables to get a more than a glass.  The blender does it all, it is good if your blender will crush ice. The ingredients are simple:   juice, fruits and/or vegetables, combined or all one flavor, add ice.  Blend to mix, add honey if sweetness is preferred or make  a dessert smoothie with the use yogurt or milk instead of juice.

Benefits of Smoothies

When using the whole raw fruit or vegetable,  it gives the vitamins, minerals, sugars, starches and almost all of the plant’s nutrients.  The fiber from the fruits provide the benefits to the health of the colon and bowel.  Remember to wash the raw fruits and vegetables.

Our morning smoothie gives us a good way to start the day.  It is a bit of sunshine for these dark and cold mornings.  Have you noticed you like your comfort foods this time of the year?  Think of the times you pamper yourself with a chocolate bar, desserts,  dish of potatoes, gravy, noodles, macaroni and cheese, and pasta.

A quick healthy way to get the nutrients from fruits and vegetables in a refreshing beverage in one glass by drinking a Smoothie

Serves: 4 glasses
Ingredients
  • 1 cup mango and passion fruit juice, consider "Lite" juice
  • 1 banana, sliced
  • 1 small orange, peeled and sliced
  • 1 medium apple, cored and cut in small chunks
  • 2 tablespoon of blueberries
  • 2-3 cups of ice cubes
Instructions
  1. Using a blender which crushes ice or crush up the ice cubes.
  2. Pour juice into the blender.
  3. Add the banana, orange, apple pieces.
  4. Puree until blended.
  5. Add the blueberries
  6. Blend briefly
  7. Add ice cubes, few at a time and blend until the ice is crushed.
Notes
Add a carrot, celery, or ginger to the fruit blend. Use your imagination of combinations of fruits or vegetables. Use less ice if a thinner smoothie is preferred, more ice makes it frozen slush. Yogurt, sherbet, milk, ice cream added would make dessert smoothies, though a lost in the amount of nutrients from the fruit................................ Steamed Caulifower with Mornay Sauce

Cauliflower seems to be latest vegetable in the spotlight, at least from many of the blogs I have been receiving.  It is not one of those vegetables  I  use very often  unless I have a specific recipe. It  is a versatile vegetable to be used in salads, casseroles, soups or vegetable side dish and on a pizza or stir-fried frozen cauliflower.

There are several ways to cooking cauliflower and other fresh vegetables. To have them keep their food value and looking fresh and delicious it is best to “undercook”, that is, to cook the vegetables as short as time as possible  and still be tender not over cooked.  The cooking time will vary the cooking method. Here is a list of methods to cook fresh vegetables:  steaming, boiling, pressure cooking, braising, baking, frying and roasting.

Steaming Cauliflower cover over 2 ” water for 5-7 minutes.

Cauliflower can provide the healing powers to boost the immune system and inhibit tumor growth. Vitamin C and vitamin B folate support the immune system.  To keep the nutrients at the peak, choose solid white heads without brown spots. Eating raw or steamed cauliflower provides the most nutrients.  Store with the steam down to prevent excess moisture in the florets.

Looking through an older cookbook, I found this recipe for Cauliflower with Mornay Sauce a French cheese sauce.  It is cauliflower florets steamed then covered with bread crumbs and melted butter as an au gratin. The Mornay Sauce base is Béchamel Sauce, a basic medium thick white sauce, with the added butter and cheese.  This is poured in the center of the cauliflower and browned under the broiler.

 

The Cauliflower with Mornay Sauce was very good even though the finished dish did not look like the picture.  I also used all the cauliflower in the casserole. I should have cooked the white sauce longer  before adding the cheese.  The original recipe called for Parmesan cheese, I used Pecorino-Romano and  too few bread crumbs.   The end recipe turned out to be closer to cauliflower soup and delicious anyway.

An elegant cauliflower casserole is served with a generous sprinkling of bread crumbs, butter and a French cheese sauce broiled to brown the crumbs and sauce.

Cuisine: French
Serves: 6 servings
Ingredients
  • 1 large head of cauliflower
  • 1 cup freshly ground bread crumbs
  • ⅓ cup melted butter
  • 1 recipe of MORNAY SAUCE
  • Basic White Sauce or Bechamel Sauce as follows.
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups milk
  • ¾ teaspoon salt
  • ¼ teaspoon white pepper
  • To complete Mornay Sauce add
  • 2 tablespoons butter
  • 1 cup grated Pecorino-Romano cheese
Instructions
  1. Wash and trim cauliflower into florets.
  2. Steam the cauliflower until tender, 5-7 minutes over 2 inches boiling water.
  3. Arrange cauliflower around the edge of casserole.
  4. Melt the butter in a medium sauce pan.
  5. Whisk in the flour until smooth.
  6. Gradually stir the milk, constantly stirring or use whisk to blend.
  7. Cook until sauce is thick.
  8. Stir in the salt and pepper.
  9. Prepare the Mornay Sauce
  10. Add the butter in small pieces.
  11. Stir in the Parmesan cheese, beating until the butter is melted.
  12. Generously sprinkle bread crumbs over the cauliflower.
  13. Drizzle ⅓ cup melted butter over the bread crumbs
  14. Spoon Mornay Sauce into the middle of baking dish.
  15. Broil until the crumbs are lightly browned.
Notes
Swiss cheese is often used in the Mornay Sauce, you may prefer other cheeses. Less salt may be better if the cheese is especially salty. Inspired by The Creative Cooking Course, 1973.....................................................................................

In the Italian tradition, lentils-sausage stew was our New Year’s food for luck. It seems across the continents good luck is thought to be prosperity,  good health, happiness, success and longevity. We aren’t Italian, we  wanted to try another tradition to celebrate the New Year’s.  It would be interesting to prepare the New Year’s evening menu recipes from around the world which are noted to be Lucky New Year’s Food. 

Here is my suggestion for your 2017 New Year’s Menu celebration.

Italy:  Cotechino con Lenticcjie, pork and lentils
American South: Black-eyes peas, Hoppin’ John, cooked greens
Japan:  Toshikoshi Soba, long buckwheat noodles
Ireland  Buttered Bread Sandwiches
Spain:  12 grapes  referring to Champagne
Berlin:  Berliner Pfannkuchen, jelly doughnuts
Greece: Vasilopita, a New Year’s Cake with a coin hidden in it.                                                                        The person getting the coin will have good luck all year.

Slow Cookers or Crock-Pot cooking are  great for winter hearty stews, soups or casseroles. Red Lentils-Sausage Stew is a good example of easy meal preparation.  We had a romaine tossed salad, crusty garlic bread, Cinnamon Apple Sauce and Brown Sugar Marble Pound Cake om/crock-for desert. No Champagne, however, we did have some Soft White Wine by Oliver’s Winery.  It was a quiet and satisfying New Year’s Eve. Looking forward to 2016 offerings.

A slow cooker makes a hearty stew of red lentils, sausage and vegetables. A winter time comfort food to enjoy with crusty bread.

Cuisine: Italian
Serves: 8 cups
Ingredients
  • ½ sausage, remove casing and crumble, or crumble whole sausage
  • 1 cup red lentils, rinse
  • ½ cup onion, chopped
  • 2 garlic cloves, minced
  • ½ cup carrots, coarsely chopped
  • ½ cup celery, coarsely chopped
  • 1 medium potato, chopped in ½ inch cubes
  • 14.5 oz tomatoes and juice
  • 1 cup frozen cut spinach
  • 1 cup chicken broth
  • 2 cups water
  • ½ teaspoon cayenne
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon oregano
  • salt and pepper to taste
Instructions
  1. Layer all the vegetables on the bottom of the slow cooker.
  2. Add the crumbled sausage.
  3. Pour in the broth and water.
  4. Add the seasonings and stir into the broth.
  5. Cover, cook on high for 3 hours.

My apologizes for not have anything out the last 2 weeks.  We went on a week vacation to Texas; it was a good train trip from Chicago to Mineola, Texas and back home.  The fun event when traveling by train is meeting different dinner companions assigned to sit with you at each meal.  It is like opening a Christmas present to discover new and interesting  people to become part of your  world.

I, the cook and designer of this blog fell down and fractured my sternum.  Other than “OUCH!!” get up and  keep going, there was not much else to do.  After getting home, some resting,  there was some teaching cookbookinabox partner, husband, how to cook for us. He did a fantastic Slow Cooker  Beef Pot Roast with Vegetables.  I did get an orange jello salad together.  There isn’t much to prepare on celery and carrots and Cinnamon Apple Sauce for dessert.

 

 

A time for Birthday Celebration too.

Birthday Celebration for my husband rated his favorite Netta Belle’s Choice ®Chocolate Cake. No candles, didn’t want to set off the fire alarms.

That went pretty well, so the next day I made the Butternut Squash, Chicken and Pecan Tart. I can’t even use my own recipes without making some changes; I used ham cubes instead of chicken and a Honey Crisp apple.  I baked the squash first, but did not bake it long enough, so baking the tart took much longer to get the squash tender. 

Menu ideas for the Holidays ahead.

Now I am thinking what to have for the holidays of Christmas and New Years.  It has been a tradition to have Potato and Crab Meat Soup on Christmas eve and fruit salad and crusty French Bread.

One of our favorite Christmas menus have been: Cornish Hens, risotto, Brussels Sprouts with Sesame Seeds, Cranberry Orange Salad, Hot Dinner Rolls, American Apple Pie with Vanilla Ice Cream.  We like a nice white wine with dinner and a nibble of Skillet Chocolate Fudge.  A few  years ago we had pan fried lamb chops with herb pan sauce, acorn squash filled with butter and brown sugar, Stir-Fried Cauliflower, cranberry, apple, cherry jello salad, Sweet Whole Wheat Bread and pumpkin pie. We were in central Indiana last week, passed an orchard by New Castle, Indiana and could not resist the big sign of Honey Crisp Apples.  So we bought a few, they were so large and nice.  After a apple crumb pie, apple salad, applesauce, apples with cabbage, fried apples, snacking on apples, we needed more apples.  This time we got seconds, said to be used for cooking, well, they were as good as the prime apples for eating.

Applesauce, just right for snack time or on top of toast.

Applesauce is a favorite fruit to have on hand for desserts, eating on bread or to use in baking.  This time I decided to get out the crock pot.  That really makes it easy and a time saver to do other things while the apples are cooking.

I did plain applesauce: cooked  apples and put  the sauce  into clean jars to be kept in the refrigerator.  I did actually preserve some by using water bath canning..  I anticipated a much larger batch of applesauce.  A lot of water boiling, for cleaning jars and for water bath kettle for 3 pints of applesauce.  Oh well,  it was a good practice  as I do not do canning often.

Cooking apples in a crock pot is easy and a quick way to make applesauce, plain or cinnamon.

Recipe type: Dessert
Cuisine: American
Serves: 4 pints
Ingredients
  • 15 large apples
  • 2 tablespoons lemon juice
  • ½ cup water
  • ½ cup sugar
  • 1 teaspoon cinnamon.
Instructions
  1. Put 2 tablespoon lemon juice into large bowl.
  2. Peel, core and cut apples into 1½ inch chunks or 8ths put into the large bowl.
  3. Stir frequently to get the lemon juice on the apples to prevent browning.
  4. Put into the crock pot.
  5. Add the water, sugar and cinnamon.
  6. Cook in the crock pot for 2 hours on high.
  7. Mash with a potato masher to desired consistency.
  8. Put into clean pint jars and cover with lids,
  9. Store in refrigerator to use.
  10. Or store cans on the shelf after water bath canning.
Notes
This is not my original recipe. The internet and cookbooks are similar; it varies by quantity of ingredients, much is to your tastes. For plain applesauce, omit the cinnamon. Fresh Cranberry Orange Salad

 The fresh glossy tart red berries of winter celebrations are here in abundance as Thanksgiving and winter holidays begin. Cranberries are at their peak from October through December.  Although available all year in juices, canned, dried and frozen cranberries, there is something more festive and delicious to use the fresh cranberry.  Bags of fresh cranberries are readily available to freeze and have during the year. 

Nutritional Benefits

The cranberry belongs to the same genus as the blueberry and a good source of ellagic acid, an antioxidant compound.  Cranberry juice is known for the healing power of prevention and treating urinary tract infections.  The cranberry antioxidant provides important anti-inflammatory benefits to the cardiovascular system, digestive tract and protection against breast, colon, prostate cancers. 

The maximum nutrients and taste of cranberries are retained best when used  fresh and not prepared in a cooked recipes.  When frozen they can be chopped in a blender for fresh cranberry salads, or unfrozen tossed in salads or added to a favorite fruit juice.  Dried sweetened cranberries provide another source of the nutritional benefits to add to cereals, salads, rice, breads, cakes and brownies or a serving size of 1/3 cup to eat by the handful.

Cranberry Cooking

o   Combine cranberries with apples, oranges and  pineapple pecans and sweeten with honey or fruit juice for a salad.  o   Red gelatin combined with  whole cranberry sauce, crushed pineapple, chopped apple and  chopped walnuts makes an attractive salad for the holiday table.                                                                                                                                            o   Cooked sweeten cranberries make a good side dish to serve with roast turkey or ham.  Boil one cup of water, one cup of sugar, add 3 cups of cranberries.  Cook 10 minutes, or berries pop, pour into serving dish; let cool to room temperature.   The sauce can be refrigerated and served cold.                                                                                                        o Dried cranberries can be utilized in salads, breads, and with entrees such as Cranberry Balsamic Glazed Chicken.

Ingredients
  • 12 ounces fresh whole cranberries or frozen whole berries
  • 1 medium naval orange
  • ¾ cup sugar
  • ¼ cup gelatin powder, cherry, orange, or lemon
  • ¼ cup coarsely chopped pecan
Instructions
  1. Chop cranberries in blender or food processor.
  2. Pour into large bowl.
  3. Using the whole orange, cut into quarters or smaller and chop in the blender or processor.
  4. Add the orange pieces to cranberries.
  5. Stir in the sugar, gelatin powder and pecans.
  6. Cover; refrigerate at least 2 hour to dissolve sugar and cool.
Notes
Fresh Cranberry Salad can be frozen after it is made. Having a Roast Beef Dinner is a big event at cookbookinabox’s  house.  Several reasons which many probably may identify . Health is our biggest reason, fat,  cholesterol is higher in red meats.  Expense, it is more expensive to have choice cuts on a regular basis.  Meatless meals is often our choice.  However, there are times when a nice Roast Beef Dinner brings good memories and is comfort food.

We have the cast iron dutch oven that was my husband’s grandmothers.  It had made a long trip through Texas when the family travel by horse and wagon in the early 1900’s. So it is always a treat and fun to use this kettle.  I also like to use this kettle for soups as well.

Since there are only 2 of us in the home, I bought a small beef bottom round roast under 2 pounds.  The recipe was adapted from Joy Of Cooking’s, Beef Pot Roast, cooked in a convection oven instead of the stove.

Preparing the beef roast for the oven

After baking the beef roast and removing to a plate to keep warm, I decanted the juices and fat into a fat separator.  I poured off the juices into a measuring cup, and poured about 4 tablespoons fat back into the dutch oven to make the roux for gravy.  I used the juices and added cream to make 2 cups for the liquid to the 4 tablespoons of fat and  4 tablespoons of flour.

A special Sunday Dinner Roast Beef, tender, juicy to be enjoyed with mashed potatoes and gravy.

Ingredients
  • 2 pound beef bottom round roast
  • 2 tablespoons oil
  • ¼ cup flour
  • ½ cup onions, finely chopped
  • ½ cup carrots, finely sliced
  • 1½ cups beef stock or bouillon
  • 1 teaspoon seasoning blend
  • ½ teaspoon Sea Salt
  • ½ teaspoon Ground Black Pepper
  • GRAVY
  • 4 tablespoons fat
  • 4 tablespoons flour
  • 1½ cups meat juices
  • cream to make 2 cups liquid
Instructions
  1. Preheat oven to 325 F.
  2. Trim off fat, make cuts into the side of the meat to prevent curling
  3. Flour all sides of the roast.
  4. Heat the oil in the Dutch oven.
  5. Brown the roast on all sides.
  6. Add the onions, carrots, and broth to the roast.
  7. Cook about 5 minutes.
  8. Bake in the preheated oven 2 hours or until meat is tender, to 155 F to 165 F for medium well.
  9. Remove meat from pan to a dish; cover to keep warm
  10. GRAVY
  11. Strain off the vegetables.
  12. Decant the juices and fat into a fat separator.
  13. Pour off the juices, on top, to a measuring cup, add cream to make 2 cups liquid
  14. Pour 4 tablespoon fat and juices to the Dutch oven, stir to loosen the bits and pieces of the meat.
  15. With a whisk, add the flour, stirring until blended.
  16. Gradually add the 2 cups of the liquid, stirring with the whisk to smooth.
  17. Simmer the gravy up to 10 minutes to thicken.
  18. Taste and correct seasonings as needed.
  19. Add ½ teaspoon thyme.
  20. Serve over the meat and mashed potatoes.

While fixing a beef roast dinner to post, keeping track of the recipe,  taking pictures, and still attempting to have a full meal prepared in a timely way can be a challenge. Even then, dinner was 2 hours later than planned.  However, everything was done on time. Now using one or two packages of frozen mixed vegetables makes it even quicker.  Using a purchased oil and vinegar salad dressing”  or your choice to marinate will be time saving also.

A quick and easy salad made from frozen mixed vegetables and seasoned with fresh parsley. A salad to enjoy on picnics, carry-ins or holiday dinners.

  • 1 12-ounce package frozen mixed vegetables
  • ¼ cup onion, diced
  • 2 tablespoons red bell pepper, diced
  • 1 tablespoon fresh parsley, minced
  • ½ cup cider vinegar
  • ¼ cup vegetable oil
  • ¼ cup sugar
  • ½ teaspoon Netta Belle's Choice Sea Salt
  • ¼ teaspoon pepper Netta Belle's Choice Black Pepper
  • ½ teaspoon Netta Belle's Choice Flavour-Enhancer Spice Blend
  • ⅛ teaspoon or less Netta Belle's Choice Crushed Red Pepper
Instructions
  1. Put the frozen vegetables in a bowl.
  2. Microwave just to thaw, 2-3 minutes.
  3. Stir, add the diced onion, red bell pepper and parsley.
  4. Mix the vinegar, oil, sugar and seasonings.
  5. Pour over the vegetables and blend.
  6. Chill several hours or overnight, stir occasionally.

The Pumpkin Roll recipe is a favorite of many community cookbooks or in the Sunday newspaper recipes.  I have used it for several years as it was given to me by a friend.   I finally read the label on Libby’s® Pumpkin l and there it was.  So I  give Libby’s credit for this easy and attractive dessert.  Of course over time, cooks have tweaked it to their taste of hand-me-down recipes.

HOW-TO DO A PUMPKIN ROLL

The cake of the pumpkin roll is a sponge cake; it has a light, springy texture, like a sponge. The batter is baked into a thin layer in a jelly roll pan. Many sponge cakes use eggs as the leavening agent, this recipe has 3 eggs plus  baking powder and  baking soda.  Having ingredients at room temperature is important habit for baking.  If using separated eggs as in some sponge cakes, the egg whites whip to more volume at room temperature. 

It is important to  have the 15 1/2 x 10 1/2 x 1-inch baking pan greased and lined with parchment paper also greased and floured before using.  This enables the thin flat cake to come out of the pan for easy rolling. I use a damp cloth to turn the cake onto, roll up and cool in the refrigerator for one hour. Don’t get the cloth too damp as it will tear up the cake. Some recipes advise using flour or powdered sugar to  turn the cake on and let it cool at room temperature.  When removing the sponge cake from the oven, place the pan on a wire rack for 1 minute to cool and slightly pull away from the sides of the pan; run a knife around the edge.  Turn the cake onto the prepared cloth, peel the parchment paper off.

The short end of the  cake is rolled up in the cloth to set the shape as well as to let it cool.  I cool in the pumpkin roll in the refrigerator 1 hour, then  remove and unroll the cake to be filled. Spread the filling within 1/2 inch of the edges.  It will fill to the edge  as the cake is rolled up.  Carefully roll up the cake and filling, pulling the cloth from the cake.  Place the pumpkin roll  on a serving platter, seam side down.  Powder sugar can be sprinkled on top just before serving.  The sugar will dissolve into the cake if sprinkled too soon before serving.

I do not make 2 pumpkin rolls as a rule.  Since we had a Halloween Party to attend, I doubled the recipe and made the 2 rolls, putting them in a 9 x 13 cake pan for carrying.  They were a hit in the dessert line, just add a bit of whipped cream. One roll will make 10, 1/2 inch slices.

A popular autumn dessert of moist Pumpkin Cake Roll filled with cream cheese and powder sugar filling.

Ingredients
  • CAKE
  • ¾ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • ⅔ cup pumpkin puree
  • 1 teaspoon lemon juice
  • FILLING
  • 6 ounces cream cheese
  • 1 teaspoon vanilla extract
  • ½ cup butter
  • 1 cup sifted powdered sugar
Instructions
  1. Jelly roll pan 10 x 15, greased, lined with parchment paper, greased and floured.
  2. Preheat over to 375 F.
  3. Sift together all the dry ingredients, set aside.
  4. In large mixer bowl, combine eggs, sugar, pumpkin and lemon juice.
  5. Beat on high speed for 5 minutes.
  6. Gradually add dry ingredients into the egg/sugar mixture beating until smooth.
  7. Pour into the prepared pan.
  8. Bake 15 minutes at 375 F.
  9. After baking flip cake on damp cloth, roll up from short end, cool in refrigerator 1 hour.
  10. Combine cream cheese, vanilla, butter and powdered sugar.
  11. Mix until blended and smooth.
  12. Assemble Pumpkin Roll:
  13. Unroll the cake on the cloth.
  14. Spread filling on the cake leaving ½ inch from the edges.
  15. Reroll the cake, peeling away the cloth.
  16. Lift roll on serving plate with the seam side down.
  17. Sprinkle with powdered sugar just before serving sliced cake.
Notes
This recipe can be doubled to make 2 pumpkin rolls. 2½ cups batter will be needed to fill the 2 jelly-roll pans and 1¾ cups of filling for each roll.--------------

They are both called pies, and are served in or on  a crust.  The quiche is a flaky pastry shell filled with an egg custard of  cheese, meats and/or vegetables..  The pizza is a yeast dough crust for savory toppings, hot and spicy also of cheese, meats and/or vegetables.  Introducing the Cheese-Bacon Quiche also referred to as a Quiche Lorraine.

Quiche Lorriaine was first a custard base of few pieces of meat and poured into a hollowed out bread shell  Now the delicious Cheese-Bacon Quiche is poured into a pastry shell.  Some quiches have the meats, cheeses or vegetables on the bottom of the pastry shell with the egg custard poured on top. Quiches make a very good breakfast, brunch and small tart-like quiches make tasty appetizers or hors d/oeuvres.

Savory pastry shells can be made by adding  egg yolks or Parmesan cheese.  The pastry for this particular quiche was made with coconut oil.  Coconut oil does not have a flavor of coconut and the pastry is very flaky making it somewhat hard to handle getting into the pie plate.  The flakiness of the pie dough adds texture to the custard filling.

An egg custard filling with cheese, bacon and onion baked in a crust, a classic French recipe for Quiche Lorraine.

Ingredients
  • 1 unbaked 8-inch pie shell
  • 4 slices bacon
  • ½ cup onion, sliced
  • ¾ cup milk
  • 2 eggs, beaten
  • 1 cup Cheddar cheese, grated
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoon parsley, chopped
  • Pinch of sugar
  • Pinch of nutmeg, freshly grated
  • Dash of hot sauce
  • Paprika
Instructions
  1. Preheat oven 350 F.
  2. Chill pie shell before filling. Remember to warm a glass pie plate before putting into hot oven.
  3. Fry the bacon in skillet until crisp.
  4. Remove from skillet, drain on toweling and crumble.
  5. Drain excess bacon grease from pan, save 1 teaspoon or enough to cook the onions until transparent.
  6. In a large bowl, combine milk, eggs, ¼ cup cheese, salt, pepper, sugar, nutmeg and hot sauce.
  7. Stir in the bacon and onion.
  8. Pour into the prepared pie shell.
  9. Sprinkle the remaining cheese on top.
  10. Sprinkle with the paprika.
  11. Bake 350 F for 35 minutes or until knife inserted in the middle comes out clean.

Your family will love you when they get up  on a holiday morning to the wonderful smell of homemade  Sour Cream Bundt Coffee Cake.  This moist and rich cake has a strudel of brown sugar, cinnamon crumb mixed in the middle.  The cake has golden raisins mixed into the cake batter giving an extra sweetness.

A sweet and moist coffee cake for breakfast or brunch. Cinnamon strudel filling and golden raisins add flavor and sweetness.

Ingredients
  • CAKE
  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 8 ounces of unsalted butter at room temperature
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 3 eggs
  • 1 cup sour cream
  • 2 teaspoons vanilla
  • ⅓ cup golden raisins
  • STRUDEL
  • 4 tablespoons flour
  • 4 tablespoons butter
  • 10 teaspoons brown sugar
  • 1 teaspoon cinnamon
  • GLAZE
  • ½ cup powdered sugar
  • 1 tablespoon milk
Instructions
  1. Preheat oven 350 F
  2. Bundt Pan: butter, dust pan with 2 teaspoons flour and sugar, tap out excess.
  3. In large mixing bowl, cream the sugar and butter together until light and creamy.
  4. In another bowl blend the flour, baking powder, baking soda and salt, sift together.
  5. Add ½ cup of flour mixture to the butter and sugar.
  6. Blend at low speed.
  7. Beat in 1 egg at time.
  8. Alternate the addition of flour with the other 2 eggs.
  9. Add the remaining flour mixture, sour cream and vanilla, beat until evenly mixed.
  10. Fold in the ⅓ cups of raisins with a spatula.

  12. Mix strudel ingredients:
  13. Blend with a fork until crumbly mixture.
  14. ----------
  15. Pour ½ the cake into the prepared pan.
  16. Spread the strudel over the cake batter.
  17. Add the remaining cake batter over the strudel.
  18. Bake 55 minutes, or until cake tester comes out clean.
  19. Let the cake cool for 5 to 10 minutes, and remove to pan.
  20. When the cake has cooled, drizzle glaze over the cake.
Notes
This can also be made in 9 x 13 pan or in an 9 inch springform pan. The strudel becomes the streusel by putting the crumb mixture on top of the cake before baking. This coffee cake can be made a week ahead; wrap well and freeze. Many coffee cakes are made with a yeast batter.  The Sour Cream Bundt Coffee Cake uses baking powder and baking soda as the leavening agents.  It is an easy and quick ‘from scratch’ cake to make.  What is even better, the  coffee cake can be make a week ahead, wrap well and freeze.  Defrost in the wrapping overnight and warm for breakfast.

I have been leafing through my older cookbooks for old recipes I have used.  The Sour Cream Coffee Cake was first published in The Best of Food & Wine 1990 as an exclusive gift edition.  I made moderate adaptions by making a strudel instead of adding walnuts and chocolate.
