Marshmallow Pineapple Tropical Salad

A light salad or dessert for a luncheon or buffet. Easy to prepare and can be made with favorite fruits and nuts.

  • 1 20 ounce can of pineapple tidbits
  1. Drain juice from pineapple into double boiler. Reserve pineapple tidbits.
  2. Add honey, cornstarch and eggs to pineapple juice.
  3. Whisk to blend, stir while cooking to thicken.
  4. Stir in the butter and cool.
  5. Pour the thickened dressing into a serving bowl.
  6. Fold in pineapple, marshmallows, dates, pecans and oranges.
  7. Chill a few hours before serving.

Ingredients for marshmallow pineapple salad 

Dates, marshmallows, pecan, pineapple tidbits and orange make up the tropical salad.  Maraschino cherries add color as well as sweetness.  Be creative in your selection.
