While fixing a beef roast dinner to post, keeping track of the recipe,  taking pictures, and still attempting to have a full meal prepared in a timely way can be a challenge. Even then, dinner was 2 hours later than planned.  However, everything was done on time. Marinated Vegetable Salad is quick and easy even in the days when the vegetables where poured from individual cans. Now using one or two packages of frozen mixed vegetables makes it even quicker.  Using a purchased oil and vinegar salad dressing”  or your choice to marinate will be time saving also.

Since this was a dinner for two, I used only one package of the frozen mixed vegetables for the Marinated Vegetable Salad.   I did add diced onion, diced red pepper and made the oil and vinegar dressing for marinating.

A quick and easy salad made from frozen mixed vegetables and seasoned with fresh parsley. A salad to enjoy on picnics, carry-ins or holiday dinners.

Ingredients
  • 1 12-ounce package frozen mixed vegetables
  • ¼ cup onion, diced
  • 2 tablespoons red bell pepper, diced
  • 1 tablespoon fresh parsley, minced
  • ½ cup cider vinegar
  • ¼ cup vegetable oil
  • ¼ cup sugar
  • ½ teaspoon Netta Belle's Choice Sea Salt
  • ¼ teaspoon pepper Netta Belle's Choice Black Pepper
  • ½ teaspoon Netta Belle's Choice Flavour-Enhancer Spice Blend
  • ⅛ teaspoon or less Netta Belle's Choice Crushed Red Pepper
Instructions
  1. Put the frozen vegetables in a bowl.
  2. Microwave just to thaw, 2-3 minutes.
  3. Stir, add the diced onion, red bell pepper and parsley.
  4. Mix the vinegar, oil, sugar and seasonings.
  5. Pour over the vegetables and blend.
  6. Chill several hours or overnight, stir occasionally.
Notes
The recipe for the oil and vinegar dressing can be made to your preferences in the amount of sugar and seasonings or quanity.------------------------------------------
